I didn't write that page.  The example there looks to me like it was copied
out of the SVN docs.  image/gif is the right mime-type for .gif files if you
want to add one.  I don't think it makes any difference to Subversion, in
the way Zope Corp is running its svn server, whether .gif files have a
mime-type or not.  Subversion will itself add a mime-type property, of its
own invention, if it thinks a new file is of any binary (non-text) type.
