I don't have any problems with tables, but I'd like to avoid wrapping 
where possible. Putting text inside <td> cells which are significantly 
smaller than the page width makes it more likely that longer text will 
wrap. Furthermore, I'd guess that much of the quoted stuff works fine if 
you can hand tune the HTML ("that field name is a bit long, I'll make 
the cell a bit wider"), but not for automatically generated forms.

The article at http://www.clagnut.com/blog/241/ seems happy with 
definition lists, and the HTML 4 spec encourages uses other than actual 
definition lists. Given that the context is an automatically generated 
form, and the target audience is non-end-user application/data managers, 
I don't see anything particularly wrong with using <dl>.
